Victoria Sponge cake

2 eggs
100g/4oz caster (soft white) sugar
100g/4oz self raising flour
100g/4oz margarine
1. Whisk the margarine and sugar together until light & creamy in texture.
2. Whisk the eggs, and mix into the mixture slowly, whisking all the time.
3. Gently fold in the flour, making sure not to knock the air out of the cake mixture.
4. Place mixture into a greased 7" cake tin or two 7" sandwich tins, and bake in moderate oven (325-350; Gas mark 3-4) 25-30 mins. in two tins, 40-45 mins. in one tin.
5. When cooked, leave to cool, and then, if only one has been made, split the cake and fill with jam and/or cream.
